The Red: Samsara Priorat

"This is a big and bold full-bodied red that works well with any grilled or roasted red meats – steaks and other BBQ meats, slow braised beef or venison. It’s good with rich dishes in general – cassoulets, duck confit, grilled chorizo or Toulouse sausage," Antonia explains. "In Catalunya in the northeast of Spain, this would be enjoyed with a chuleton (a T-bone steak) or other typical dishes like llangonissa amb fesols (grilled sausage with beans), corder a la brasa (grilled lamb), or botifarra negra (a sort of black pudding). All of them are often served with aioli."

The White: De Alberto Organic Verdejo

"This wine is ripe and textured enough to stand up to more robust seafood like roast cod or monkfish served with dill beurre blanc or sauce vierge (a bitter fennel note on the finish makes it work well with herbal sauces), accompanied by grilled vegetables or fennel salad," Antonia says. "It would also be a great match for roast chicken or pork – the fresh acidity would cut nicely through a bread sauce or a creamy sauce."

"Bright and crunchy red fruits coupled with fresh acidity in this wine makes it pair well with richer oily fish like grilled trout or salmon served with summer salads," Antonia notes, adding, "It’s vibrant enough to stand up to punchy flavours in dishes like Greek salads or fish tacos with guacamole. You could also pair it with rice dishes, grilled vegetables and goat’s cheese salads."
